Let's kick things off with tomato quinoa salad! As written, it is a vegan vegetarian, gluten-free, and have the most amazing garlic lime dressing to amp up the flavor!

Tomato Quinoa Salad
It's time to add the delicious recipes quinoa another game of our food preparation! This tomato Quinoa salad, flavorful, quick and easy to make in advance for a quick lunch and side for the home, school or work!

Feel free to double this recipe if needed, very easy to do!
Materials

  • 1/2 cup of dry quinoa
  • 3/4 cups water
  • 2-3 cup chopped/sliced tomato
  • 15 oz can chickpeas, drained and rinsed
  • 1/4 cup chopped Onions
  • 1/4 cup fresh lime juice (from 2 limes)
  • 2 tablespoons Avocado Oil
  • 1 clove garlic (crushed and chopped)
  • 1 tablespoon chopped fresh parsley
  • 1/2 tsp ground cumin
  • 1/4 TSP sea salt
  • 1/8 tsp pepper
  • additional fresh chopped parsley to taste

Instructions

  1. First rinse and drain the quinoa you use mesh strainer or sieve. Bring a small saucepan to medium heat and lightly toasted quinoa to remove any excess water. Stir the Act for just a few minutes. This step is optional, but it really adds to the nuttiness and fluff factors quinoa! Next add your water, burner set to high, and bring to a boil. Once boiling, reduce heat to low and simmer, cover with the lid slightly ajar, for 12-13 minutes or until quinoa is smooth and liquid has been absorbed.
  2. While quinoa is cooking, chop, slice and the preparation of the remaining ingredients.
  3. To make the sauce, combine the avocado oil (or healthy oil of your choice) with fresh lime juice, chopped garlic, parsley, cumin, salt and pepper. 
  4. After Your quinoa is ready, fluff with a fork and let cool (I usually pop mine in the refrigerator or freezer for a few minutes to cool it) then combined with tomatoes, onions, beans and parsley extra anything you like! I usually add an extra tbsp 2-3 parsley-I love the flavor! Toss salad greens with half the sauce and dive in! Drizzle extra salad dressing desired and feel free to add any additional seasonings to taste.
