Chewy, perfectly spiced Gingerbread Bar meets sweet, delicious Cream Cheese Frosting and it was meant to be the fitting! This is one of the best holiday Bar and once you try them you will want to make them every Christmas season! List of cookies that I need to make each year just keeps getting longer and longer:).
This bar is a great meeting in the Middle type of ginger. They are not too seasoned, softer but still delicious gingery bar. So children and adults alike will love them. Sometimes when I make gingerbread with lots of ginger or molasses can be a bit too strong for my kids but this was perfect. It still has enough ginger and molasses in them that I love them and not too much for my kids because they love them just as much.
Materials
Bar
- 2 cups + 2 tbsp (300 g) plain flour (spoon and level to measure)
- 1 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 TSP nutmeg
- 1/4 TSP ground clove
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 (169g) Cup unsalted butter, diced into 1 tablespoon pieces, melted and cooled slightly
- (220g) 1 cup packed light brown sugar
- 1/4 cups (60 ml) unsulphured molasses
- 1 large egg
- 2 tsp vanilla extract
Frosting
- 1/2 cup butter at room temperature, it is almost (I like to use a 1/4 c 1/4 c unsalted butter salted)
- 1 (8 oz) package cream cheese, at room temperature are almost
- 2 1/2 cups (325g) powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 350 degrees. Spray baking pan 13 by 9-inch with cooking spray, set aside. In a medium mixing bowl whisk together the flour, ginger, cinnamon, nutmeg, cloves, baking soda and salt, set aside for 20 minutes.
- In the bowl of a standing electric mixer fitted with the paddle attachment, blend together the butter, sugar and molasses until combined. Combine eggs vanilla extract. With the mixer set on low speed Add the flour mixture in slowly and stir until combined. Fold the dough with a spatula as needed until the dough appears to incorporate evenly.
- Pour the batter into the prepared baking dish and spread and press into an even layer using your hands. Bake in the oven until the Bar has baked through, approximately 14-17 minutes (be careful not to overdo the roast). Transfer baking sheet to a wire rack and let cool Bars completely.
- For cream cheese frosting:
- In the bowl of a standing electric mixer fitted with the paddle attachment cream together the butter and cream cheese until smooth. Add powdered sugar and vanilla and mix until light and fluffy. From here I want to freeze frosting in intervals of 3 minutes later I mix between intervals using a mixer stand until the consistency I like (it usually takes about 9 minutes total). Spread frosting over cooled bars. Cut into cubes. Cover with lid or plastic wrap and store in the refrigerator.
