Grilled pork Liempo

Materials

  • 1 kg pork liempo (stomach)
  • ½ cup soy sauce
  • ¼ Cup vinegar
  • 3 tablespoons sugar
  • black pepper, ground
  • Oregano
  • Basil
  • 5 cloves garlic, minced
  • 1 tablespoon canola oil

Instructions

  1. In a bowl large enough to contain all the meat, mix the soy sauce, vinegar, sugar, basil, oregano, black pepper and garlic. Mix well and make sure that there is no sugar bits that settle at the bottom of the bowl.
  2. Marinate pork liempo (stomach) in a mixture for about 30 minutes to 1 hour (or longer if you're not in a hurry).
  3. Preheat the convection oven turbo grill at 350 degrees Fahrenheit.
  4. Place the sliced marinated pork liempo (abdomen) on the grill/oven turbo convection. Carefully. 🙂
  5. Add the oil to the remaining marinade and stir. Use it to baste the pork belly slices.
  6. Set the timer for the first 15 minutes then baste pork belly again. Do this every 10mins to pork evenly cooked to your liking. This is to ensure the pork does not change dry and locked all the juice.
  7. When finished grilling, remove pork belly from the oven grill and place on a paper towel to help absorb the oil from fat.
  8. Cut into bite-size pieces or serve each slice. This is your call.
  9. Serve as Pulutan or serve with hot rice.
