I've adapted Carrie buckwheat and banana pancake recipe to make a pancake with a spicier Christmas feel. Carrie likes to Add sliced fruit to pancakes and it gives me the inspiration to add the pear-shaped slices of Christmas. This is such a simple recipe and one is great for getting the kids to help with.

I whipped up the dough in a blender and when I'm doing a Finn are cutting out Christmas shapes from slices of pears I prepared earlier. Finn ate all cut off but you can add it to salad or fruit salad to use up.
Both boys quickly work their way through this dish and I admit to having some of them too. Unfortunately, even though we make a few batches, there is never any left over for my husband to try! They are just that good.

Materials
- 2 ripe bananas
- 1 medjool date
- 3 eggs
- 1/3 cup buckwheat flour
- 1 tbsp & 1 tsp cinnamon
- 2 tsp ground ginger
- 1 tsp ginger puree
- Coconut oil (for frying)
- 1 large sliced pears
Instructions
- Blend bananas and dates together until fully broken.
- Add all other ingredients (except the oil and pear) and mix until fully combined.
- Cut Christmas shapes from slices of pears using a cutter little cake.
- Heat a bit of coconut oil in a non stick skillet to high heat. Reduce heat to medium and add 1 tbsp of mixture into pan. Repeat until pan is full (I managed to get 5 at a time in the Pan I)
- Place a pear-shaped Christmas to each pancake and cook until ready to be flipped (about 1 minute) cook the other side until it is finished.
- Serve.
