Festive, fun, and fresh salad describes Christmas perfect! This salad makes a wonderful side dish perfect for anything that you will serve this holiday-full of flavor and texture and light, but filling. Plus, it can be made completely in advance!
I'm very excited about the recipes today! I like the salads, but let's face it-they can be boring. I often get in "Liang's salad" where I am just tired of lettuce. Well this lovely Christmas salad is far from boring! And, technically there is lettuce is not involved! Mix shredded Brussels sprouts and kale provides the basis for this salad – much more flavor than plain old lettuce.
I'm a big fan of raw vegetables in General, but I never knew how delicious Brussels sprouts are in the form of raw. They have a mild cabbage flavor that I like. And combined with the kale salad makes a perfect base!
Christmas Salad
Fresh and festive side dish to add to your holiday table! This salad is full of flavor and texture. Throw it all with a sharp citrus sauce for the perfect winter salad!

For the salad
- 3 cups finely shredded Brussels sprouts,
- 3 cups finely shredded Kale,
- 1 ½ cup pomegranate Arils *
- ½ cup chopped almonds, toasted *
- 3 slices cooked Bacon, crumbled (omit for vegetarian)
- ¼ Cup Parmesan cheese, finely grated
For the dressing
- 1 orange, zested and Juiced
- 1 lemon, zested and Juiced
- 1 teaspoon Dijon Mustard
- 1 teaspoon honey
- 1 clove garlic, crushed
- Kosher salt and freshly ground black pepper
- ¼ Cup Extra Virgin olive oil
Instructions
- In a large bowl combine the Brussels sprouts, kale, pomegranate arils, almond, bacon and cheese; stir.
- In a mini food processor or blender combine the Orange and lemon juice zest, mustard, honey, garlic cloves, salt, and pepper; pulse to combine. With the machine running, slowly add the olive oil in a stream.
- Toss salad with dressing and top with cheese if desired.
Notes:
* Pomegranate arils are the seeds of the pomegranate fruit. You can find them in a container in some stores. If you can't find them, just bought two pomegranates and the seeds of their own. It is actually very easy! Just cut the pomegranate in half and then place into a large bowl of water. Gently hold the pomegranates (cut side down) and push up the fruit to release the membrane. Use your fingers to push the seeds from the membrane. The seeds will fall to the bottom and small pieces of membrane will float to the top – you can skim off and then drain the water and you will have Your seed!
* To toast almonds: Preheat a small sauté pan over medium-low and add the almonds. Toast, stirring occasionally for 5 minutes-keep a close eye on them, you don't want them to burn! They will be golden brown and fragrant when they do.
You can make this salad before-just keep it separate and salad dressing until you are ready to serve.
