Yang Chow Fried Rice

Ingredients
  • 5 cups cooked white rice or left over rice and refrigerated overnight
  • 10 pieces shrimps, shelled and deveined
  • 2 pieces raw eggs, beaten
  • 2 tablespoons soy sauce
  • 1 teaspoons salt
  • 1 teaspoon garlic, minced
  • 3 tablespoons Canola cooking oil
  • 1 cup fried ground beef or pork
  • 1 pc chorizo bilbao sliced
  • ¾ cup green peas
  • ¼ cup green onion, chopped

Instructions
  1. In large a bowl, break the refrigerated rice to separate grains.
  2. In a large wok over high heat, pour 1 tablespoon of Canola oil.
  3. Saute onions and garlic then cook until soft.
  4. Add the chorizo bilbao and cook for about 3 minutes.
  5. Add the shrimp and cook until color changes to pink.
  6. Add green peas and cook for 2 minutes then remove from pan and set aside.
  7. In the wok pour 1 tablespoon of Canola oil then add the well beaten eggs then cook then allow the eggs to set for about 1 minute.
  8. In the wok, add another 1 tablespoon of Canola oil and when its smoking hot, add rice and cook for about 2 minutes. Using the back of spoon, break the eggs into pieces, set aside.
  9. Add shrimp and chorizo bilbao mixture, soy sauce and green onions. Gently toss all the ingredients to combine.
  10. Season with black pepper and salt then mix well.
  11. Put-in the scrambled egg and green onions then cook for 2 minutes while mixing with the other ingredients.
  12. Serve hot with coffee.
