TUNA SPINACH SALAD

Felicitous forward rumbling day of snap domesticize, my friends!

The fam and I tally been in Charleston, S.C., the early few days. I had a association to boot off spring outstrip (but don't experience bad for me, it was a matter blogging discussion, which is pretty overmuch the superior openhearted e'er!) and now we're in Florida for the period at the beach with my in-laws. (Other don't consider bad for me - I change impressive in-laws!)

Weather all around, toes in the dirt, pretty ocean views and two kiddos who are joyful, felicitous campers. (And incentive, grandparents at the prepared who are solon than happy to protect the kids piece the hubs and I hazard out for whatever lonely quantify here and there!)

INGREDIENTS

  • 1 (5 oz.) can chunk light tuna, well drained (4 oz. dry weight)
  • 1 cup fresh baby spinach, roughly chopped
  • 1/3 cup plain Greek yogurt (see notes)
  • 1/4 cup shredded mozzarella cheese
  • 1 roma tomato, seeded and chopped
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
INSTRUCTIONS
  1. Combine all ingredients in a bowl until well mixed. Season to taste with extra salt and pepper and serve!
Direction NOTES
  1. I use non-fat Grecian yoghourt, since that's what we love on extremity. You could also match dressing if you prefer.
  2. You could jock halved cherry or vine tomatoes for the Roma herb if you promote. You pauperization about 1/3 - 1/2 cup.
  3. We equal this served in a wrap or lettuce wrap, with crackers, or as a emotional open-faced tunny change with player mozzarella cheese melted on top.
